“Wine Country” Spinach Salad with Wild Rice Grape Pilaf and Halloumi

Here’s a lunch recipe for you if, like me, you are are a delightful weirdo who enjoys Food in Bowls. I’m the only person in my family who likes food this way: eaten from a big vessel, all piled together, like a salad but more interesting than a salad, and with the freshest ingredients you can find. Meals like this often take more time to put together than your usual PB&J, but I’ve found that doubling the recipe works well if you store the base ingredients (in this case, the dressed rice pilaf) in a separate container than the toppings (here, the spinach salad as well as the cheese) in the fridge. I suggest doubling because a lunch like this make you never want to slap some peanut butter on a slice of tired bread ever again. Just trust me. Cooking! (And Then Totally Cooling, Because It’s Hot Out): Sesame-Peanut Noodles

We were on vacation in the Outer Banks this summer when we ducked into Upside, a restaurant in Corolla, which, although clearly not the place whose employees ordinarily might jump up with glee and clap when a family with three small kids comes waltzing in, smiled and made room for us all the same. They had a special on the menu that night, a sesame noodle salad with some sort of scallops on top, and ever since we came back home in July I’ve been trying to recreate them (just the noodles–I could never recreate those scallops).Here’s the problem, though. These noodles–any sesame noodles, I think, because I’ve been trying them all–are, while incredible, not for everyone. My darling husband (you know him as David), holds a bit of an icy  place in his heart when it comes to cold noodles. He just doesn’t appreciate–nay, understand!–the concept. That’s Just the Stomach Virus Talking

David picked up sushi for dinner the other night. It was Sunday, and the end of a particularly grumpy weekend. Most of the house was sick, with Cian and I warily eyeing everybody else, telepathically trying to ward off the germs, wondering if quarantine in a nearby hotel (with a pool, and a spa, and babysitting services) should be in order. David slept more in one day than I think he’s slept in the last five years. I was scrubbing preschooler barf out of our bedroom carpet. The washing machine wept from overuse.  You get the idea. And since nobody was cooking, we brought food in. Because what else does a person crave after he comes out the other side (BWAHAHA) of a stomach bug? Why, raw fish, of course! You may have your Sunday roasts, with carrots and potatoes in the slow cooker, or you–yeah,  you over there–were contentedly standing over your grill that evening, flipping burgers with one hand while drinking some cold beer from a can with the other.
